Induction cooktops are new appliances that use high frequency elctromagnets to induce energy into metal cookware.  It is very efficient because heat that is generated in the cooking vessel is transferred to the vessel’s contents. The actual burner stays cool.

It does require all cookware be made of metal, not aluminum, copper, etc.  Induction has been popular in Europe and is just now showing up in American stores.

Does induction save energy? Typical efficiency of induction cooktops is 84%, while that of gas cooktops is 40%. Cooking accounts for a little less than 3 percent of an average home’s energy use per the DOE so the savings are minimal. Costs of induction cooktop are higher than regular ones, so the advantages are more technological at this point.
